The "Garage Trick and Everything But the Kitchen Sink" sourdough.
For this bread the last bag of einkorn flour was emptied, the remaining half deli-cup full of khorasan grain was milled, and whole wheat flour from the bottom of the bin was tipped out. With the rest of the day busy doing errands away and no available refrigerator space (should have checked that first...), the ice cold garage seemed like the best option for the loaves to hang out for the next 16 hours. As Shakespeare's Helena said, "All's well that ends well."
